This centerpiece dish of great Creole/Cajun cookery can accent seafood, chicken and cured meats individually or in a tasty medley. The combination of tomatoes, onions, green peppers, celery and garlic simmered with our original spice blend creates a versatile one-pot dish with a lively mix of flavors. Our authentic Louisiana seasoning of red, black and white peppers with onion, garlic, filé and parsley adds just the right heat and flavoring for this celebration meal. Original Cajun Recipe. Product Usage Instructions:

You’ll need: Cajun’s Choice Jambalaya Seasoning Mix, 1½ lbs boneless chicken cut into bite-sized pieces and/or medium uncooked, cleaned shrimp, 1 lb smoked sausage sliced (Kielbasa works great), 2 cups chopped onion, 1 cup chopped celery, 1 cup chopped bell pepper, 4 cups chicken broth, one 15 oz can diced tomatoes, and 2 cups uncooked long-grain rice.

In a 6–8 quart pot, brown the sausage and chicken, adding 2 tablespoons of butter or olive oil if needed to prevent sticking. Remove the meat and set aside. Drain off all but about 2 tablespoons of drippings, then add the onions, celery, and bell pepper. Sauté over medium heat for 15 minutes. Return the sausage and chicken to the pot, then add the broth, tomatoes, and Jambalaya Seasoning Mix. Bring to a boil, then stir in the uncooked rice. Cover and simmer for 5 minutes, stir again, and reduce the heat to low. Cover and cook for an additional 45 minutes. If using shrimp, stir them in during the last 15 minutes of cooking.

Serves 6–8. Leftovers heat up beautifully in the microwave!
