We learned to make bread from ground corn from the Native Americans starting with the earliest pioneers. The wheat breads that our European ancestors were accustomed to couldn't be made because wheat was not grown in the New World. In Texas the early settlers came to like the corn-based breads prepared by the Native Americans and cornbread became a staple of our Texas way of eating.
